Equipment

  • medium bowl

  • large bowl

  • hand mixer

  • 2-litre pudding bowl

  • greaseproof paper, tin foil

  • string

  • large pot and lid

Ingredients

In a medium bowl, mix all dry ingredients - except for the demerara sugar - together.

In a large bowl, beat the butter and sugar until creamy, add the eggs and mix until pale and fluffy.

Gradually add the dry mix and stir until combined.

Add in the Christmas Pudding Fruit Mix, the grated apple, stout, whiskey and orange zest and juice. Stir well with a wooden spoon.

Pour the mixture into a well-greased, 2-litre pudding bowl.

Cover with greaseproof paper and a layer of tin foil and tie down securely.

Place the bowl in a large pot of boiling water, cover it with lid and steam for 6 hours, frequently topping up the boiling water.

Allow to cool in the bowl overnight.

Notes

1. Sprinkle some icing sugar for extra sweetness and you can decorate it with some berries, as seen in the video.

2. Serve with cream and enjoy!
