Coffee and walnut cake is a classic in so many homes. It’s quick to make, tastes great and is guaranteed to get you over the 3pm slump! The playful addition of a coffee royal icing is a change from buttercream and is much faster to make.

I’ve been serving this cake for years, I hope you get to try it out.

Equipment

  • Weighing scales

  • Oven

  • 1 x 2lb loaf tin

  • Parchment paper

  • Mixing bowl

  • Spatula

  • Sieve

  • Whisk

  • Chopping board

  • Knife

Ingredients

  • Cake:

  • 225g soft butter

  • 225g Gem caster sugar

  • 225g Gem plain flour

  • 1.5tsp Gem baking powder

  • 4 medium eggs

  • 2 tbsp instant coffee

  • 2 tbsp hot water

  • 100g Gem walnuts, chopped

  • Topping:

  • 175g Gem royal icing

  • 1 tsp instant coffee

  • 1 tbsp hot water

  • 12 Gem walnut halves

Instructions

Preheat your oven to 180C/160C fan.

Line the 2lb loaf tin with parchment or a paper liner.

Dilute the instant coffee in water and set aside.

Into a mixing bowl, cream the soft butter and sugar until soft and pale.

To this add the sieved flour, baking powder, eggs and diluted coffee.

Mix to form a smooth batter.

Add in the chopped walnuts, mix through and spoon into the prepared tin.

Place in the preheated oven and bake for 55-60 minutes or until a skewer inserted comes out clean.

Once baked, remove and allow to cool in the tin for 10 minutes before demoulding onto a wire rack.

For the topping, dilute the coffee and hot water and add this to the royal icing.

Whisk this together for 3-4 minutes until thick and glossy.

Spoon and spread this over the cooled loaf cake and top with walnut halves.
