Red Velvet cake is hands down one of the most popular cakes for people to make. Not only does the striking red sponge look amazing but it’s got the most delicious flavour & texture. Cover this with a tangy cream cheese buttercream and you have one of the most delicious celebration cakes.

Equipment

  • 2 x 8” round tins

  • Mixing bowls

  • Stand/hand mixer

  • Whisk

  • Spatula

  • Parchment paper

  • Piping bag

Ingredients

  • Cake:

  • 250g butter

  • 250g Gem caster sugar

  • 3 medium eggs

  • 30g unsweetened cocoa powder

  • 2 tsp red gel food colouring

  • 1 tsp vanilla extract

  • 300g Gem plain flour

  • 240ml buttermilk

  • 1 tbsp white vinegar

  • 1 tsp Gem Bread Soda

  • Cream Cheese Buttercream:

  • 300g butter, soft

  • 400g Gem icing sugar

  • 250g full-fat cream cheese

  • 2 tbsp Gem granulated sugar

Preheat the oven to 160C/140C Fan.

Grease and line 2 x 8” round cake tins.

Into a bowl, whisk the butter and sugar until soft and pale.

To this, gradually add the eggs, mixing between each addition.

Add the food colouring and vanilla. Mix.

Sieve in the flour and mix while pouring in the buttermilk.

Finally add the vinegar and Gem bread soda.

Mix to form a smooth batter.

Divide between the two tins and bake in the preheated oven for 40 minutes or until the sponges are baked and springy to touch.

Remove and allow to cool in the tins for 10 minutes then transfer to a cooling rack to cool fully.

For the buttercream, cream the butter and icing sugar until soft.

To this add the cream cheese and vanilla and mix.

Once the sponges are cold, sandwich and cover with the buttercream. I like to keep some back and pipe some rosettes on top of the cake.

For added garnish, I added a few drops of red food colouring to some granulated sugar and mixed it until a red sugar is left. You can sprinkle this on top of the cake before you serve to add some colour.
