Equipment

  • 9” square tin

  • Sieve

Ingredients

  • 500g Gem plain flour

  • 1 tsp salt

  • 40g Gem caster sugar

  • 7g (1 sachet) active/fast dried yeast

  • 250ml milk, room temperature

  • 1 medium egg

  • 50g butter

Into the bowl of a stand mixer fitted with the dough hook attachment, add the salt and sugar

Add the flour, followed by the yeast.

Make a well in the centre and add the milk and egg.

Mix on medium speed for 6–8 minutes, until the dough comes together.

Add the softened butter and continue to mix for a further 10 minutes, or until you have a smooth, elastic dough.

Place the dough in a lightly greased bowl, cover with a clean cloth and leave to prove somewhere warm until doubled in size.

Once proved, turn the dough out onto a lightly floured work surface and divide into 9 x 100g pieces.

Using your hand, cup each piece of dough and roll into a tight ball.

Line a 9-inch square tin with parchment paper and place the 9 dough balls inside.

Cover with a clean cloth and leave to prove again until doubled in size.

Preheat the oven to 190°C (170°C fan).

Dust the proved rolls with flour and bake for 20–25minutes.

Once baked, allow to cool in the tin for 10 minutes before transferring to a wire rack to coolcompletely.

These rolls are best enjoyed within 24 hours, or they can be wrapped well and frozen until needed.
