Ingredients

Instructions

1
Preheat your oven to 160°C Fan, 180°C Non-Fan or Gas Mark 4. Line 2 baking trays with parchment and set to the side.
2
Add the gourment mixed fruit (100g), nuts (25g walnuts & 25g almonds) into a bowl, mix and set to the side.
3
In a small saucepan, add the butter, golden syrup, Gem brown sugar and stir over a gentle heat until melted and combined. To this add the flour and beat with a wooden spoon to remove lumps.
4
Spoon this mixture over the Gem fruit & nuts and mix.
5
Divide the mix into 12 and roll into balls. Place 6 per tray allowing space between them as they will spread during baking.
6
Flatten the balls slightly and pop into the preheated oven and bake for 10-15 minutes or until golden brown.
7
Once baked, remove and allow to cool on the tray. When cold, remove and place on a wire rack.
8
To decorate, melt the dark and white chocolate. Spoon some of the white chocolate into a small piping bag to help create the spider's web. Turn the florentines upside down and on the smooth side spread on some melted dark chocolate to cover.
9
While the dark chocolate is still wet, starting in the centre of the florentine, pipe on a swirl of white chocolate and using the back of a small knife or a toothpick, drag outwards to create a feathered effect to resemble a spider's web. Allow the chocolate to set.
