These fruity flapjacks are a wonderfully cosy bake, packed with juicy apricots, raisins and sultanas, all folded through buttery, golden oats. A touch of coconut, vanilla and warming spices which makes every bite feel comforting. Soft, chewy and satisfyingly fruity, they’re perfect with a cup of tea, tucked into a lunchbox or enjoyed as an afternoon treat. Simple to make and even better once chilled, these flapjacks are sure to become a family favourite.

Equipment

  • Large saucepan

  • Large bowl

  • Wooden spoon

  • Spatula

  • Weighing scales

  • Baking tray - I used a 13x9 inch one

  • Parchment paper

  • Large glass or jam jar

Ingredients

  • 100g Gem soft dark brown sugar

  • 220g golden syrup (molasses or corn syrup in America)

  • 220g butter

  • 100g Gem Gourmet Chopped Apricots

  • 50g Gem Gourmet Raisins

  • 50g Gem Gourmet Sultanas

  • 1 tbsp vanilla extract

  • 450g porridge oats

  • 70g Gem Desiccated Coconut

  • 1 tsp Allspice or Mixed Spice

  • 1 tsp nutmeg

Instructions

Preheat the oven to 160°C fan.

Add Gem Soft Dark Brown Sugar, golden syrup, butter, Gem Chopped Apricots, Gem Gourmet Raisins and Gem Sun-Dried Sultanas to the saucepan and heat on a medium until everything is melted and combined. Turn off the heat.

In a separate bowl add oats, Gem Desiccated Coconut and the spices, and stir well.

Add the dry mix to the saucepan and stir until the oats are fully coated with the buttery mix.

Line your oven tray with parchment. Using the spatula and wooden spoon flatten the oat mix on the tray. Use the glass or jam jar to press the mixture down well.

Bake for 18-22 minutes. Remove from the oven and cut carefully while still warm. Then leave to cool fully before storing in the fridge
