A Galette is just like a free-hand pie, and just as delicious! Whether you want to go sweet for a dessert, or savoury for a lunch, this is a recipe to get creative with! We’ve gone for a basic apple filling, but mix and match whatever way you want to!

Equipment

  • large mixing bowls

  • lined baking tray

Ingredients

  • For the Crust:

  • 180g Gem Plain Flour

  • 2 Tbsp Gem Caster Sugar

  • 1 Tbsp Gem Soft Light Brown Sugar

  • Pinch of Salt

  • 65g Cold Cubed Butter

  • 5ml Apple Cider Vinegar

  • 60ml Chilled Water

  • For the Filling:

  • 2- 3 Apples, cored and sliced

  • 2 Tbsp Soft Light Brown Sugar

  • 1 tsp Cinnamon

  • Zest and Juice 1/2 Lemon

  • Pinch of Salt

  • 1 Egg for wash

  • Sprinkle of Gem Demerara Sugar

Instructions

Add your flour (180g), caster sugar (2 Tbsp), soft light brown sugar (1 Tbsp), salt (A pinch) and butter (65g) to a large mixing bowl. Rub them together between your fingers until it's combined. Add in your apple cider vinegar (5ml) and chilled water (60ml). Mix until a dough forms. Chill for 2 hours.

Preheat your oven to 225°C after the two hours has elapsed.

Add your apple slices to a large mixing bowl. Add in your lemon zest and juice, cinnamon (1 tsp), soft light brown sugar (2 tbsp), salt (a pinch). Mix together until all the apples are coated.

Flour a work surface and roll your dough out until it is about 1/2 cm thick. Place your apple slices in a circle, overlapping each other, making sure to leave a gap of about 3cm to the edge.

Roll up the dough to the apples, tucking it under itself as you go. Once the dough has been rolled up, brush with an egg wash and sprinkle demerara sugar all over. Bake for 25 - 30 mins or until golden brown!

Once baked, leave to cool completely and serve with cream and berries!
