  • large mixing bowls

  • quiche tin

  • For the Crust:

  • 220g Gem Plain Flour

  • 115g Room Temp Butter, cubed

  • 60ml Cold Water

  • For the Filling:

  • 250ml Single Cream

  • 2 Large Eggs

  • Pinch of Nutmeg

  • Pinch of Salt

  • Pinch of Pepper

  • Filling of your choice (we used bacon bits, sauteed peppers and onion)

Preheat your oven to 200°C Fan / 220°C.
In a large mixing bowl, add in your flour (220g) and room temp butter (115g). Crumble the butter and flour with your fingertips until it resembles fine breadcrumbs.
Add in 60ml of cold water and work the dough with your hands until ball forms. Leave to the side for a few minutes.
If you are using any sauteed veg or meats, this is the time to cook them, while your dough rests.
Flour a work surface and roll your dough out so it will fit a fluted quiche tin. Gently place the dough into the tin when it's rolled out and lightly press into the sides. Prick the bottom with a fork.
In a jug or mixing bowl, whisk together the cream and the eggs, adding the nutmeg, salt and pepper when they're combined.
Spread your filling out on the base of the dough and pour the egg / cream mix in. Bake for 30 minutes in the middle of the oven.
Allow to cool before serving.

Be creative, add your own twist to it by adding ingredients such as fried onion, bacon or cherry tomatoes. Serve it with fresh mixed salad.
