Equipment

Ingredients

  • For the Dough:

  • 500g Gem plain flour

  • 7g instant yeast

  • 250ml warm milk

  • 75g Gem caster sugar

  • 80g unsalted butter, softened

  • 1 large egg

  • 1 tsp salt

  • For the Cinnamon Filling:

  • 100g Gem soft light brown sugar

  • 60g unsalted butter, softened

  • 2 tbsp cinnamon

  • 100g Gem Gourmet Raisins

  • For the Icing Drizzle:

  • 200g Gem icing sugar

  • 3 to 4 tablespoons water (adjust for consistency)

  • 1 tsp vanilla extract

Instructions

In a small bowl, mix the warm milk, yeast, and one tablespoon of caster sugar.

Let it sit for 5-10 minutes until foamy.

In a large mixing bowl, combine plain flour, remaining caster sugar, and salt.

Add the yeast mixture, egg, and softened butter to the dry ingredients.

Mix and knead for about 10 minutes until the dough is smooth and elastic.

Cover with a damp cloth and let it rise for one to one and a half hours, or until doubled in size.

Prepare the Filling: Mix the soft light brown sugar and cinnamon in a small bowl.

Once the dough has risen, roll it out into a 40x30 cm rectangle on a floured surface.

Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.

Shape the Rolls: Roll the dough up tightly from the longer side to create a log.

Cut into 12 equal pieces and place them in a greased baking dish.

Cover and let them rise again for 30-45 minutes, until puffy.

Bake: Preheat the oven to 180°C and bake for 18-22 minutes until golden brown.

Make the Icing and Serve: In a bowl, mix together the icing sugar, water, and vanilla essence until smooth.

Adjust the water amount for a thick but pourable consistency.

Drizzle the icing over the warm cinnamon rolls.
