Dot cake cups are inspired by the popular dot cake trend that went viral recently, with a delicious twist of fresh seasonal strawberries. These gorgeous individual dessert cups are made with a light and fluffy Gem vanilla sponge, layered with sweet strawberry jam and juicy fresh strawberries, then finished with a swirl of creamy vanilla buttercream.

To create the famous dot cake effect, we dip the buttercream into colourful rainbow sprinkles, giving each cup a fun and vibrant finish. Perfect for little bakers, these colourful treats are easy to assemble, bursting with strawberry flavour, and look fantastic lined up on the table with their sprinkle-covered tops!

Ingredients

  • For the Sponge:

  • 200g Gem Self-Raising Flour

  • 200g Gem Caster Sugar

  • 1 tsp Gem Baking Powder

  • 200g butter, softened

  • 4 eggs

  • 1 tsp vanilla essence

  • For the Strawberry Filling:

  • 200g fresh strawberries, diced

  • 4–5 tbsp strawberry jam

  • For the Vanilla Buttercream:

  • 250g butter, softened

  • 500g icing sugar, sifted

  • 2 tsp vanilla essence

  • 2–3 tbsp milk

  • To Decorate:

  • Rainbow sprinkles

Instructions

Bake the Sponge

1. Preheat the oven to 180°C Fan
2. Line a 9 x 13 inch rectangular tin.
3. Beat all cake ingredients together until smooth.
4. Spread into the tin and bake for 25–30 minutes.
5. Cool completely.
6. Cut into small cubes or crumble into chunks.

Make the Buttercream

7. Beat the butter until pale and fluffy.
8. Gradually add the icing sugar.
9. Add vanilla and milk.
10. Beat for 3–4 minutes until light and creamy.

Build the Glasses

11. Layer 1
Sponge, Spoon of strawberry jam, Fresh strawberries
12. Layer 2
Sponge, Strawberry jam, Fresh strawberries
13. Finish
Top with vanilla buttercream right to the edge of the glass.

The Dot Cake Effect

14. Pour rainbow sprinkles onto a shallow plate.
15. Gently press or roll the buttercream-covered top edge of the dessert into the sprinkles.
16. The sprinkles will stick to the buttercream, creating the colourful viral dot cake look.
17. Add a small strawberry on top if desired.
