Equipment

  • a large bowl and a smaller one

  • weighing scales

  • knife

  • chopping board

  • 8 inch square tin

  • parchment

  • spatula

Ingredients

  • 200g cold butter

  • 300g Gem Plain Flour

  • 100g Gem Demerara Sugar

  • 100g porridge oats

  • 1tsp allspice/mixed spice

  • 1tsp ground ginger

  • 3 large plums (300g)

  • 50g of Gem Instant Royal Icing

  • 1.5 tsp of water

Instructions

Preheat your oven to 150° C fan and line your baking tin with parchment.

Chop your butter into small pieces and place into a large bowl.

Add the Gem Flour, and using your fingers, crumb the butter and flour until it resembles a biscuit like texture.

Add the sugar, oats and spices and mix together well.

Weigh out 300g of the mix into your lined tin, and put what's left into the freezer for five minutes.

Using a spatula press the crumble mix down well into the tin so it is firm and solid.

Take the rest of the crumble mix from the freezer to cover the plum layer. Ensure the plums are fully covered. You will have some topping leftover which can be stored in the freezer for another time.

Bake for 45 minutes. Once out of the oven, use the knife to score the top to make it easier to slice later. Leave to cool fully.

To make the topping, mix the Gem Instant Royal Icing with the water and stir with the spatula or a fork. This can be drizzled over the cake once it is cool.

Notes

If you find the cake too crumbly to cut you can store it in the fridge.
